  • 5 potatoes
  • Salt

  1. Clean the calamari, removing the thin cartilage on their back, the beak, and the eyes, as the eyes can burst while frying. Rinse them, salt them, and place them in a colander to drain.
  2. Once they have drained, dredge the calamari in flour and fry in hot oil until golden brown on both sides. Fry for 3 minutes on each side; any longer can make them tough. Once done, transfer to a serving plate.
  3. Peel and cut the potatoes, then fry in hot oil until golden brown. Serve the calamari and fries hot.
