Ingredients

  • 500 g fresh fava beans, cleaned
  • 1 onion, finely chopped
  • 2 spring onions, finely chopped
  • 8–10 slices of sun-dried tomatoes
  • 2 ripe tomatoes, finely chopped
  • 1 bunch of dill, chopped
  • 200 g water
  • Salt
  • Pepper
  • Paprika
  • Olive oil

Instructions

  1. Clean the fava beans by removing the strings, as you would with green beans. For tougher pods, keep only the seeds.
  2. Wash the fava beans and place them in a pot. Cover with water and bring to a boil over high heat. Boil for 10 minutes.
  3. Drain the beans, refill the pot with fresh water, and repeat the boiling process for another 10 minutes. Drain again and set aside.
  4. Heat olive oil in a pot over medium heat and sauté the onion and spring onions for 3 minutes.
  5. Add the fresh tomatoes and sun-dried tomatoes, and sauté everything together for another 2 minutes.
  6. Add the fava beans, dill, salt, pepper, paprika, and water. Stir to combine.
  7. Simmer over medium-low heat for 50–55 minutes, or until the fava beans are tender. Add more water during cooking if needed.
