
Ingredients
- 500 g fresh fava beans, cleaned
- 1 onion, finely chopped
- 2 spring onions, finely chopped
- 8–10 slices of sun-dried tomatoes
- 2 ripe tomatoes, finely chopped
- 1 bunch of dill, chopped
- 200 g water
- Salt
- Pepper
- Paprika
- Olive oil
Instructions
- Clean the fava beans by removing the strings, as you would with green beans. For tougher pods, keep only the seeds.
- Wash the fava beans and place them in a pot. Cover with water and bring to a boil over high heat. Boil for 10 minutes.
- Drain the beans, refill the pot with fresh water, and repeat the boiling process for another 10 minutes. Drain again and set aside.
- Heat olive oil in a pot over medium heat and sauté the onion and spring onions for 3 minutes.
- Add the fresh tomatoes and sun-dried tomatoes, and sauté everything together for another 2 minutes.
- Add the fava beans, dill, salt, pepper, paprika, and water. Stir to combine.
- Simmer over medium-low heat for 50–55 minutes, or until the fava beans are tender. Add more water during cooking if needed.
