Ingredients

  • 500g yellow split peas (fava)
  • 1 onion, sliced
  • 1.5 liters water
  • 60g olive oil
  • Oregano
  • Salt

For Garnishing

  • 1 onion, sliced
  • 3-4 tbsp olive oil
  • 1 tbsp vinegar (optional)
  • Olives

Instructions

  1. Prepare the Fava:
    • Place the fava beans in a bowl of water and let them soak for 1 hour.
    • After soaking, drain the beans in a colander.
  2. Cook the Fava:
    • In a pot, heat the olive oil and sauté the onion until it becomes translucent but not browned.
    • Add the fava beans, salt, oregano, and water to the pot.
    • Stir gently until the water begins to boil.
    • Skim off any foam that forms on the surface.
    • Once boiling, lower the heat and simmer for about 50 minutes without stirring to prevent sticking.
  3. Blend:
    • When the fava is soft and cooked through, remove from heat and blend using an immersion blender or a potato masher until smooth.
  4. Serve:
    • Serve warm, garnished with onion slices, a drizzle of olive oil, and a splash of vinegar if desired. Add olives on the side for an authentic touch.
