- 500g yellow split peas (fava)
- 1 onion, sliced
- 1.5 liters water
- 60g olive oil
- Oregano
- Salt

Instructions
- Prepare the Fava:
- Place the fava beans in a bowl of water and let them soak for 1 hour.
- After soaking, drain the beans in a colander.
- Cook the Fava:
- In a pot, heat the olive oil and sauté the onion until it becomes translucent but not browned.
- Add the fava beans, salt, oregano, and water to the pot.
- Stir gently until the water begins to boil.
- Skim off any foam that forms on the surface.
- Once boiling, lower the heat and simmer for about 50 minutes without stirring to prevent sticking.
- Blend:
- When the fava is soft and cooked through, remove from heat and blend using an immersion blender or a potato masher until smooth.
- Serve:
- Serve warm, garnished with onion slices, a drizzle of olive oil, and a splash of vinegar if desired. Add olives on the side for an authentic touch.
