Ingredients

  • 300g chickpeas, soaked overnight
  • 1-2 garlic cloves
  • ½ bunch parsley
  • 1 onion
  • ½ tsp baking soda
  • ½ tsp cumin
  • ½ bunch cilantro
  • ½ tsp paprika
  • 2 tbsp balsamic vinegar with honey
  • Salt
  • Pepper
  • 4-5 tbsp flour
  • A little oil for greasing

Instructions

  1. Prepare the Chickpeas:
    • Soak the chickpeas in a bowl of water overnight.
    • The next morning, drain the chickpeas and blend them in a food processor until smooth. Transfer to a bowl.
  2. Add Vegetables and Spices:
    • Blend the onion, garlic, parsley, and cilantro until finely chopped, then add them to the chickpeas.
    • Add the salt, pepper, balsamic vinegar, baking soda, flour, cumin, and paprika. Mix well until all ingredients are combined into a uniform dough.
  3. Shape and Prepare:
    • Line a baking tray with parchment paper and lightly grease it with oil.
    • Shape the mixture into flat patties and place them on the tray. Use a brush to coat the top of each patty with a little oil.
  4. Bake the Falafel:
    • Preheat the oven to 200°C (390°F).
    • Bake the patties for 15 minutes, then flip them over and bake for another 10 minutes until golden and crisp.
  5. Serve:
    • Serve the falafel with lettuce, fresh vegetables, tomato, or any sides of your choice.
