Ingredients

  • 500g black-eyed peas
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • ½ bunch parsley, finely chopped
  • Salt
  • Pepper
  • Olive oil

Instructions

  1. Prepare the Beans:
    • Wash the black-eyed peas thoroughly and boil them for 5 minutes.
    • Drain them in a colander and discard the first batch of water.
  2. Cook the Beans:
    • Return the peas to the pot and add the onion, carrot, salt, pepper, and olive oil.
    • Cover the ingredients with water, just enough to submerge them, and add a little extra.
  3. Simmer:
    • Cook over medium heat for about 35-40 minutes until the beans are tender.
    • While cooking, if more liquid is needed, add hot water as desired to achieve a slightly saucy consistency.
  4. Serve:
    • Garnish with fresh parsley and drizzle with raw olive oil before serving.
