Ingredients for the Cod
- 4 pieces of desalted cod
- 3 ripe tomatoes, finely chopped
- 3 garlic cloves, finely chopped
- 1 onion, finely chopped
- Oregano
- Salt
- Pepper
- Paprika
- 50 ml water
- A bit of flour for dusting the cod
- Olive oil
Ingredients for the Purée
- 400 g cooked white beans
- 100 ml reserved bean broth
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- Juice of half a lemon
- Salt
- Pepper
- 4 tablespoons olive oil
Preparation for the Cod
- Dust the cod pieces with flour and place them on a plate.
- In a skillet, heat some olive oil and sauté the cod for about 2 minutes on each side to form a light crust, then set aside.
Preparation for the Sauce
- In a saucepan, heat a bit of olive oil and sauté the onion and garlic.
- Add the chopped tomatoes and sauté everything together for 2 minutes.
- Add the oregano, salt, pepper, paprika, water, and the cod.
- Gently shake the pan to blend the ingredients, then simmer for about 30-35 minutes until the sauce thickens. Add more water if needed as it cooks.
Preparation for the Bean Purée
- In a skillet, heat 2 tablespoons of olive oil, lightly sauté the onion and garlic, then set aside.
- In a bowl, combine the cooked beans, salt, pepper, lemon juice, olive oil, and the sautéed onion and garlic.
- Use an immersion blender or a regular blender to purée the ingredients until smooth. If the purée is too thick, add a bit of the reserved bean broth for a creamier consistency.
