Ingredients
- 4 pieces of desalted cod
- 1 kg spinach
- 1 dry onion, sliced
- 4 green onions, finely chopped
- 2 cloves garlic, minced
- 1 leek, sliced into rings
- 1 tablespoon tomato paste
- 50 g water
- Salt
- Black pepper
- Sweet paprika
- Olive oil
Instructions
- In a large pot, heat olive oil and add the onion, leek, garlic, and green onions. Sauté until softened.
- Add the water, tomato paste, spinach, black pepper, paprika, and salt. Stir well and allow the mixture to come to a gentle boil.
- Place the cod pieces among the greens, then cover and simmer for 25-30 minutes until the greens are cooked and the sauce thickens.
- If you prefer a more broth-like consistency, add a little more water as needed.
- For a baked version, place everything in a baking dish and cook in a preheated oven at 200°C (390°F) for 45-50 minutes.
