Ingredients

  • 4 pieces of desalted cod
  • 1 kg spinach
  • 1 dry onion, sliced
  • 4 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 leek, sliced into rings
  • 1 tablespoon tomato paste
  • 50 g water
  • Salt
  • Black pepper
  • Sweet paprika
  • Olive oil

Instructions

  1. In a large pot, heat olive oil and add the onion, leek, garlic, and green onions. Sauté until softened.
  2. Add the water, tomato paste, spinach, black pepper, paprika, and salt. Stir well and allow the mixture to come to a gentle boil.
  3. Place the cod pieces among the greens, then cover and simmer for 25-30 minutes until the greens are cooked and the sauce thickens.
  4. If you prefer a more broth-like consistency, add a little more water as needed.
  5. For a baked version, place everything in a baking dish and cook in a preheated oven at 200°C (390°F) for 45-50 minutes.

This comforting dish brings out the best of fresh greens with the savory, tender cod. Perfectly balanced with a hint of tomato and warm spices, it’s a delightful taste of home-cooked Mediterranean flavor!
