Ingredients
1 whole chicken
500 g pasta
2 onions
4 ripe tomatoes
50 ml wine
2 garlic cloves
1 cinnamon stick
Olive oil
Salt
Pepper
Sweet paprika

Instructions

In a pot, heat the olive oil and sauté the chicken until browned on all sides, then set it aside in a bowl. Next, sauté the finely chopped onions and garlic for one to two minutes, then add the tomatoes. Once everything starts to simmer, add the chicken back into the pot along with the cinnamon stick, salt, pepper, paprika, and finally the wine. Keep the pot uncovered until the alcohol evaporates. Then, cover the pot and simmer over medium heat for 45-50 minutes, or until the chicken is tender. Add water if needed during cooking.

For the Pasta
Fill a pot halfway with water, add salt, and cover until it boils. Add the pasta and stir to prevent sticking, cooking for about 20 minutes or until done to your preference. Once ready, drain the pasta and return it to the pot. Try tossing it with a bit of heated olive oil instead of butter. The aroma of olive oil is truly unique.
