Lamb with Rice

Ingredients
- 1.5 kg lamb
- 2 cups brown rice
- 1 large onion, finely chopped
- 2 cloves garlic
- 3 ripe tomatoes, finely chopped
- 1 small glass white wine
- 1 red bell pepper, finely chopped
- 1 green bell pepper, finely chopped
- 1 cinnamon stick
- Salt
- Pepper
- Sweet paprika
- Olive oil
Instructions
- In a pressure cooker, heat a little olive oil and sauté the onion, garlic, and lamb until the lamb changes color. Add one chopped tomato and the cinnamon stick, then deglaze with the white wine. Close the pressure cooker and let it cook until the lamb is tender.
- When the lamb is done, open the pressure cooker and add the remaining tomatoes, half of the chopped peppers, salt, pepper, and sweet paprika. Cook uncovered for another 10 minutes.
- In a separate, shallow pot, heat a little olive oil and sauté the rice for two minutes. Then, add water in a ratio of 2.5 cups of water per 1 cup of rice (for 2 cups of rice, add 5 cups of water). Let it simmer until the rice is cooked.
- Ten minutes before the rice is fully cooked, add the remaining bell peppers, a bit more salt, pepper, and paprika.
- Let the rice rest for 10 minutes before serving. Serve warm.
