Ingredients:
- 1 kg beef, cut into portions
- 8 artichokes, cleaned
- 2 onions, finely chopped
- 2-3 garlic cloves, finely chopped
- 2 tablespoons tomato paste or 4 ripe tomatoes, crushed
- 1/2 bunch parsley or dill, finely chopped
- Salt
- Pepper
- Sweet paprika
- Cinnamon
- Olive oil
Instructions:
- Heat the olive oil in a pot and brown the beef on all sides.
- Add the garlic, onions, and artichokes, and sauté everything together.
- Remove the artichokes and set them aside in a bowl. You will add them back 30 minutes before the stew is done cooking.
- Add the tomatoes, parsley, salt, pepper, paprika, and cinnamon to the beef. Pour in enough water to cover the meat, cover the pot, and simmer until the beef is tender.
- About 30 minutes before the beef is done, add the artichokes back into the pot and continue cooking until the sauce thickens.
- If needed, add a little water during cooking.
