- 6 long eggplants, cut into large chunks

Instructions for the Eggplants
- Wash the eggplants, cut them into pieces, and place them on paper towels to dry.
- In a pan, heat the olive oil over medium heat.
- Add the eggplants and lightly sauté them until they start to brown slightly, then transfer them to a platter.
Ingredients for the Beef
- 1 kg beef
- 2 large onions, thinly sliced
- 2 cloves garlic, finely chopped
- A small handful of chopped parsley
- 4-5 ripe tomatoes, finely chopped
- 1 cinnamon stick
- Salt
- Pepper
- Sweet paprika
- Olive oil
Instructions for the Beef
- Rinse the beef well and place it in a colander to drain.
- In a large pot, heat the olive oil, then add the beef and brown it on all sides. Remove the beef and set it aside in a bowl.
- In the same oil, sauté the onions and garlic for about 2 minutes. Add the tomatoes and cook together for another 2 minutes.
- Return the beef to the pot and season with salt, cinnamon, pepper, and paprika.
- Add enough water to cover the ingredients, cover, and simmer over medium heat for about 1.5 hours, or until the beef is tender.
- When the beef is nearly done, add the eggplants and parsley, gently shake the pot to combine the ingredients, and continue cooking.
- Add hot water if needed to keep the dish from drying out.
Tips:
- Avoid stirring the eggplants with a spoon, as they can easily fall apart. Instead, gently shake the pot in a circular motion frequently to prevent sticking and to combine flavors.
