Ingredients for the Eggplants

  • 6 long eggplants, cut into large chunks
  • Olive oil for sautéing

Instructions for the Eggplants

  1. Wash the eggplants, cut them into pieces, and place them on paper towels to dry.
  2. In a pan, heat the olive oil over medium heat.
  3. Add the eggplants and lightly sauté them until they start to brown slightly, then transfer them to a platter.

Ingredients for the Beef

  • 1 kg beef
  • 2 large onions, thinly sliced
  • 2 cloves garlic, finely chopped
  • A small handful of chopped parsley
  • 4-5 ripe tomatoes, finely chopped
  • 1 cinnamon stick
  • Salt
  • Pepper
  • Sweet paprika
  • Olive oil

Instructions for the Beef

  1. Rinse the beef well and place it in a colander to drain.
  2. In a large pot, heat the olive oil, then add the beef and brown it on all sides. Remove the beef and set it aside in a bowl.
  3. In the same oil, sauté the onions and garlic for about 2 minutes. Add the tomatoes and cook together for another 2 minutes.
  4. Return the beef to the pot and season with salt, cinnamon, pepper, and paprika.
  5. Add enough water to cover the ingredients, cover, and simmer over medium heat for about 1.5 hours, or until the beef is tender.
  6. When the beef is nearly done, add the eggplants and parsley, gently shake the pot to combine the ingredients, and continue cooking.
  7. Add hot water if needed to keep the dish from drying out.

Tips:

  • Avoid stirring the eggplants with a spoon, as they can easily fall apart. Instead, gently shake the pot in a circular motion frequently to prevent sticking and to combine flavors.
