Ingredients
- 1 chicken, cut into portions
- 600 g okra
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped
- 4 ripe tomatoes, finely chopped
- 30 g vinegar
- 1/2 teaspoon sugar
- 100 g water
- Salt
- Pepper
- Sweet paprika
- Olive oil
Instructions
- Clean the okra and spread them out on a baking tray.
- Pour the vinegar over them, toss to coat, and leave them in the sun while preparing the chicken.
- Heat olive oil in a pot and sauté the chicken on all sides until browned. Remove the chicken, place it in a bowl, and set aside.
- In the same oil, sauté the onion and garlic, then add the tomatoes and sugar, and let the mixture come to a boil.
- Return the chicken to the pot, add the water, salt, pepper, and paprika. Stir and simmer over medium heat for 35-40 minutes. Add more water during cooking if needed.
- Drain the okra if there is any remaining vinegar in the tray. Arrange the okra around the chicken pieces in the pot so they are covered by the sauce.
- Cover the pot and simmer for an additional 15-20 minutes.
- Be careful not to stir the dish with a spoon, as the okra can break apart. Instead, gently shake the pot in a circular motion to prevent sticking.
