Ingredients

  • 1 chicken, cut into portions
  • 600 g okra
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 4 ripe tomatoes, finely chopped
  • 30 g vinegar
  • 1/2 teaspoon sugar
  • 100 g water
  • Salt
  • Pepper
  • Sweet paprika
  • Olive oil

Instructions

  1. Clean the okra and spread them out on a baking tray.
  2. Pour the vinegar over them, toss to coat, and leave them in the sun while preparing the chicken.
  3. Heat olive oil in a pot and sauté the chicken on all sides until browned. Remove the chicken, place it in a bowl, and set aside.
  4. In the same oil, sauté the onion and garlic, then add the tomatoes and sugar, and let the mixture come to a boil.
  5. Return the chicken to the pot, add the water, salt, pepper, and paprika. Stir and simmer over medium heat for 35-40 minutes. Add more water during cooking if needed.
  6. Drain the okra if there is any remaining vinegar in the tray. Arrange the okra around the chicken pieces in the pot so they are covered by the sauce.
  7. Cover the pot and simmer for an additional 15-20 minutes.
    • Be careful not to stir the dish with a spoon, as the okra can break apart. Instead, gently shake the pot in a circular motion to prevent sticking.
