Ingredients

  • 1 package of phyllo pastry
  • 700 g feta cheese
  • 6–8 eggs
  • 1 liter milk
  • Salt
  • Pepper
  • 1 can of soda water

Instructions

Butter your baking tray and place one sheet of phyllo at the bottom. Set aside one more sheet for the top layer.

In a bowl, crumble the feta cheese into small pieces with your hands. Lay out each phyllo sheet on your work surface, sprinkle some crumbled feta evenly over it, and scrunch the sheet with your hands to distribute the cheese. Place the scrunched phyllo into the tray. Repeat this process with all the sheets, filling the tray completely.

In a separate bowl, whisk the eggs, milk, salt, and pepper together. Pour this mixture evenly over the cheese-filled phyllo in the tray.

Lay the final sheet of phyllo on top, score the pie into portions, and pour the soda water evenly over the surface. Let the pie sit for about 30 minutes to allow the ingredients to soak and bind together.

Bake in a preheated oven at 170–180°C (340–355°F) for 30–35 minutes, or until the top turns golden brown.
