Ingredients
- 1 kg beef, cut into portions
- 2 carrots, thickly sliced
- 2 potatoes, quartered
- 1-2 zucchinis, cut into pieces
- 5-6 broccoli florets
- 3-4 celery stalks
- Salt
- Pepper
- Lemon
- Olive oil
Instructions
- Place the beef in a pressure cooker, cover with water, and add salt. Close the pressure cooker and cook for about 40-45 minutes.
- Once cooked, remove the beef and set it aside in a bowl.
- To the broth in the pot, add the vegetables, olive oil, and a little more water if needed. Once the vegetables are tender, return the beef to the pot.
- Mash 2 pieces of the cooked potatoes and add them to the soup. Simmer everything together for another 10 minutes to thicken the broth.
- Serve hot with lemon and pepper on the side.
