Ingredients

  • 1 kg beef, cut into portions
  • 2 carrots, thickly sliced
  • 2 potatoes, quartered
  • 1-2 zucchinis, cut into pieces
  • 5-6 broccoli florets
  • 3-4 celery stalks
  • Salt
  • Pepper
  • Lemon
  • Olive oil

Instructions

  1. Place the beef in a pressure cooker, cover with water, and add salt. Close the pressure cooker and cook for about 40-45 minutes.
  2. Once cooked, remove the beef and set it aside in a bowl.
  3. To the broth in the pot, add the vegetables, olive oil, and a little more water if needed. Once the vegetables are tender, return the beef to the pot.
  4. Mash 2 pieces of the cooked potatoes and add them to the soup. Simmer everything together for another 10 minutes to thicken the broth.
  5. Serve hot with lemon and pepper on the side.
