Chicken Youvetsi with Trahana

Ingredients
- 4 portions of chicken
- 300 g trahana (traditional Greek pasta)
- 4 ripe tomatoes, finely chopped
- 2 garlic cloves, finely chopped
- 2 onions, finely chopped
- Salt
- Pepper
- Sweet paprika
- Olive oil
Instructions
- In a pot, heat the olive oil, sauté the chicken, then transfer it to a bowl and set aside.
- In the same oil, sauté the garlic and onion, then add the tomatoes and continue to sauté everything together for 2-3 minutes.
- Return the chicken to the pot with the tomato sauce.
- Cover the chicken with water, season with salt, pepper, and paprika.
- Cover the pot and let it simmer for approximately 40 minutes.
- When the chicken is cooked, transfer it to a bowl again and add the trahana to the sauce.
- Stir the trahana frequently as it cooks to prevent sticking.
- If the trahana needs more water as it cooks, add as much as you like to reach your desired consistency.
- Finally, return the chicken to the pot with the cooked trahana, let everything cook together for another 2-3 minutes, then remove from heat.
