Instructions for the Meatballs
- In a bowl, add the ground beef, bread, one of the onions, two garlic cloves, parsley, tomato, eggs, salt, pepper, oregano, and 2 tablespoons of olive oil.
- Mix everything thoroughly, cover the bowl, and refrigerate for at least 1 hour.
- After chilling, knead the mixture again, shape it into meatballs, and place them on a platter.
- Heat olive oil in a frying pan over medium heat.
- When the oil is hot, add the meatballs and fry them for 1-2 minutes on each side. Remove from the pan and set them aside.
For the Assembly in the Pot
- In a pot, heat olive oil and sauté the remaining onion and garlic.
- Add the chopped tomatoes, potatoes, salt, pepper, paprika, meatballs, and water.
- Gently shake the pot to help all ingredients settle evenly.
- Cover the pot and simmer for about 35-40 minutes, until the potatoes are soft, the meatballs are cooked through, and the sauce becomes rich and thick.
- While cooking, occasionally shake the pot to prevent the potatoes from sticking. If needed, add a bit more water.
- Avoid stirring with a spoon, as it may cause the potatoes to break apart.
