Ingredients
- 1 small pig head
- 4 garlic cloves, halved
- 4 potatoes, quartered
- Salt

- 200 g water
- 3 tablespoons olive oil
Instructions
- Wash the pig head thoroughly, and if there are any remaining hairs, use a clean razor to shave them off.
- Use a sharp knife to make small cuts in the pig head and insert the garlic pieces into the slits.
- Sprinkle the head with oregano, salt, pepper, and olive oil, and place it in a Dutch oven.
- Pour the water into the Dutch oven, cover it, and roast the pig head for 2 hours.
- Occasionally check the Dutch oven and add a bit more water if necessary to ensure there’s enough for the potatoes to cook.
- After 2 hours, open the Dutch oven and place the potatoes around the pig head.
- Cover the Dutch oven again for 10 minutes to allow the potatoes to start cooking.
- Finally, uncover the Dutch oven and finish roasting with the lid off so the potatoes turn golden and the skin of the pig head becomes crispy.
