Ingredients

  • 2 kg pork ribs
  • 3 sweet potatoes
  • 100 g water
  • Salt
  • Pepper
  • Smoked paprika
  • Oregano
  • 2 garlic cloves, finely chopped
  • 3 tablespoons balsamic vinegar
  • Olive oil

Instructions

  1. In a bowl, mix together salt, pepper, smoked paprika, oregano, garlic, and balsamic vinegar.
  2. Place the ribs in a casserole dish, sprinkle with the seasoning mixture, and rub it in well.
  3. Add the water and a drizzle of olive oil. Cover the casserole dish and bake in a preheated oven at 180-190°C (350-375°F) for about 1 hour and 15 minutes, or until the meat is tender.
  4. Wash the sweet potatoes thoroughly, cut them into pieces, and season lightly with salt and pepper.
  5. When the ribs need about 25-30 more minutes to cook, add the sweet potatoes to the casserole.
  6. Monitor the liquid as it cooks; if needed, add a bit more water gradually to keep the meat from drying out.
