Ingredients

  • 1 kg spinach
  • 1 small leek, finely chopped
  • 1 bunch dill, finely chopped
  • 1 onion, finely chopped
  • 3–4 fresh spring onions, finely chopped
  • 100 g rice
  • 200 ml water
  • Olive oil
  • Salt
  • Pepper
  • Sweet paprika

Instructions

  1. Prepare the Spinach
    • Clean the spinach and soak it in water with a splash of vinegar for 2–3 minutes to remove any insects.
    • Rinse thoroughly 4–5 times until completely free of dirt.
    • Bundle the spinach together and cut it into 3–4 cm (1–2 inch) pieces in a large bowl.
  2. Cook the Aromatics
    • Heat olive oil in a pot and sauté the onion, leek, and spring onions until soft and fragrant.
  3. Add the Spinach
    • Add the spinach to the pot, stirring gently, and let it wilt down.
  4. Add the Rice
    • Pour in the water and add the rice, along with salt. Stir frequently to prevent sticking.
    • If more water is needed, add it gradually to ensure the dish remains moist but not overly soupy.
  5. Finish with Herbs and Spices
    • About 10 minutes before the rice is fully cooked, stir in the dill, pepper, and sweet paprika.
    • This ensures the flavors and aromas remain fresh and vibrant.
