- 1 kg spinach
- 1 small leek, finely chopped
- 1 bunch dill, finely chopped
- 1 onion, finely chopped
- 3–4 fresh spring onions, finely chopped
- 100 g rice
- 200 ml water
- Olive oil
- Salt
- Pepper
- Sweet paprika
Instructions
- Prepare the Spinach
- Clean the spinach and soak it in water with a splash of vinegar for 2–3 minutes to remove any insects.
- Rinse thoroughly 4–5 times until completely free of dirt.
- Bundle the spinach together and cut it into 3–4 cm (1–2 inch) pieces in a large bowl.
- Cook the Aromatics
- Heat olive oil in a pot and sauté the onion, leek, and spring onions until soft and fragrant.
- Add the Spinach
- Add the spinach to the pot, stirring gently, and let it wilt down.
- Add the Rice
- Pour in the water and add the rice, along with salt. Stir frequently to prevent sticking.
- If more water is needed, add it gradually to ensure the dish remains moist but not overly soupy.
- Finish with Herbs and Spices
- About 10 minutes before the rice is fully cooked, stir in the dill, pepper, and sweet paprika.
