Ingredients
- 1 medium cauliflower, cut into pieces
- 1 medium potato, quartered
- 2 medium onions, finely chopped
- 1–2 garlic cloves, finely chopped
- 1 bunch of parsley (or any fresh herb of your choice), finely chopped
- 2 ripe tomatoes, finely chopped
- 1 tablespoon tomato paste
- 150 ml water
- Salt
- Pepper
- Sweet paprika
- Olive oil
Instructions
- In a pot, heat the olive oil and lightly sauté the cauliflower and potato until slightly golden. Remove them and set them aside in a bowl.
- In the same pot, sauté the onion and garlic for 2 minutes. Add the tomatoes and tomato paste, stirring for 1 minute to release their flavors.
- Return the cauliflower and potato to the pot. The potato is added not only for its flavor but also to absorb excess moisture and thicken the sauce.
- Add the water, salt, pepper, sweet paprika, and parsley. Stir gently to combine.
- Simmer the dish over medium heat for 45–50 minutes, until the vegetables are tender and the sauce is rich. If needed, add a bit of hot water during cooking.
