Ingredients

  • 1 medium cauliflower, cut into pieces
  • 1 medium potato, quartered
  • 2 medium onions, finely chopped
  • 1–2 garlic cloves, finely chopped
  • 1 bunch of parsley (or any fresh herb of your choice), finely chopped
  • 2 ripe tomatoes, finely chopped
  • 1 tablespoon tomato paste
  • 150 ml water
  • Salt
  • Pepper
  • Sweet paprika
  • Olive oil

Instructions

  1. In a pot, heat the olive oil and lightly sauté the cauliflower and potato until slightly golden. Remove them and set them aside in a bowl.
  2. In the same pot, sauté the onion and garlic for 2 minutes. Add the tomatoes and tomato paste, stirring for 1 minute to release their flavors.
  3. Return the cauliflower and potato to the pot. The potato is added not only for its flavor but also to absorb excess moisture and thicken the sauce.
  4. Add the water, salt, pepper, sweet paprika, and parsley. Stir gently to combine.
  5. Simmer the dish over medium heat for 45–50 minutes, until the vegetables are tender and the sauce is rich. If needed, add a bit of hot water during cooking.
