Ingredients
- 1 kg string beans
- 3 ripe tomatoes, finely chopped
- 100 g feta cheese
- 100 g graviera cheese
- 1–2 garlic cloves, finely chopped
- 15 pitted olives, coarsely chopped
- 4 tablespoons olive oil
- A bit of fresh basil or parsley, finely chopped
- Salt
- Pepper
- Sweet paprika
Instructions
- Prepare the String Beans
- Clean and wash the string beans thoroughly.
- Bring salted water to a boil in a pot, add the beans, and cook for about 10 minutes, or until tender but not mushy.
- Drain the beans in a colander and allow them to cool.
- Sauté the Beans
- Heat half of the olive oil in a low-sided pot.
- Sauté the garlic for 30 seconds, then add the beans, salt, and pepper.
- Toss gently for 2 minutes to coat the beans with oil and garlic aroma.
- Prepare the Sauce
- In a separate pan, heat the remaining olive oil and sauté the chopped tomatoes for 3–4 minutes.
- Add the olives, basil, salt, pepper, and sweet paprika.
- Cook for about 5 minutes, until the sauce thickens slightly.
- Combine with Cheese
- Turn off the heat, add the feta and graviera cheese to the sauce, and stir gently to combine.
- Assemble the Salad
- Pour the sauce over the sautéed beans in the pot.
- Gently shake the pot to distribute the sauce evenly over the beans.
