Ingredients
- 4–5 medium potatoes
- 250 g grated melting cheese of your choice
- Salt
- Pepper
- Olive oil for frying
Instructions for the Potatoes
Peel and wash the potatoes, then cut them into even-sized pieces. Place them in a pot, cover with water, add salt, and boil over medium heat for about 30 minutes, or until they are very tender.
Drain the boiled potatoes in a colander. Transfer them to a bowl, add pepper, and mash lightly with a fork.
Frying Instructions
Heat a frying pan over medium-high heat and add 2 tablespoons of olive oil.
Once the oil is hot, add half of the mashed potatoes to the pan, pressing them down to form a firm base.
Spread the grated cheese evenly over the potato base. Cover the cheese with the remaining mashed potatoes, ensuring the cheese is completely enclosed.
Fry for 5–6 minutes on one side. Then, using a plate, flip the pie like you would an omelette.
Add another 2 tablespoons of olive oil to the pan, slide the pie back in, and fry for another 5–6 minutes on the other side.
