Pork Trotter Soup (Patsa)
Slow-cooked pork trotters simmer until tender, their rich broth infused with garlic, vinegar, and warming spices. Deep in the heart of this soulful soup, the gelatinous meat melts off the bone—comforting, hearty, and steeped in tradition.
Ingredients
- 3 pork trotters, cut into pieces
- Salt
- Pepper
- Garlic
Instructions
- Place the pork trotters in a large pot, cover with water, and bring to a boil, skimming off any foam that rises.
- Once well-skimmed, cover and cook for 35-40 minutes under pressure if using a pressure cooker, or until the meat is tender.
- When done, transfer the trotters to a bowl, remove the bones, chop the meat finely, and return it to the pot with the broth. Add more water if needed to achieve the desired broth quantity.
- Season with salt, pepper, and garlic, and simmer for another 10 minutes.
Serve hot. If you have leftovers, refrigerate, as it will solidify when cold. To reheat, simply cut a portion and warm it in a small pot without reheating the entire batch unless needed.
Why It’s Irresistible
Each spoonful combines rich collagen broth, sharp aromatics, and soft pork trotters—a bold soup that soothes and sustains.
