Ingredients for the Dough

  • 200 g yogurt
  • 160 g olive oil
  • 160 g water
  • 740 g flour (add more if needed)
  • Extra flour for rolling out the dough
  • 100 g melted butter for brushing the dough
  • A pinch of salt
  • 1 packet dry yeast
  • 1 teaspoon sugar

Preparation
Place the flour in a large bowl, add all the ingredients, and knead until you have a soft, non-sticky dough. Cover with a kitchen towel and let it rest for 1 hour.

After resting, divide the dough into two portions and roll them out into sheets to fit your baking tray. Grease the tray with olive oil, place one sheet of dough, and brush with olive oil before placing the second sheet. Ensure the sheets overhang the edges of the tray to fold over the chicken pieces later.


Ingredients for the Chicken

  • 250 g brown rice
  • 1 chicken, cut into portions
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • Salt
  • Pepper
  • Sweet paprika
  • Olive oil

Preparation
Before washing the chicken, singe it over a gas flame to remove any small feathers. Cut into portions, wash thoroughly, and pat dry with paper towels.

Heat olive oil in a pot and brown the chicken pieces on all sides. Once browned, remove them and set aside.

In the same oil, sauté the onion and garlic until soft. Return the chicken to the pot, season with salt, pepper, and sweet paprika, and cover with water. Simmer over medium heat for 30 minutes until the chicken is cooked but not falling apart. Ensure there is enough broth left for the rice—700 g of broth for 250 g of rice.


Assembly and Baking

Place the chicken pieces on top of the dough, arranging them around the edges of the tray. Fold the overhanging dough over the chicken to cover it.

In the center of the tray, add the rice, olive oil, pepper, salt (if needed), and the chicken broth. If the broth isn’t enough, top it up with water.

Preheat the oven to 200°C (390°F). Bake the dish at 170–180°C (340–355°F) for about 1 hour and 15 minutes. If the dough starts to brown too much, cover it with aluminum foil to prevent burning.
