Ingredients for 4 servings

  • 4 potatoes, sliced and lightly fried
  • 8 eggs
  • 200 ml milk
  • 2 tablespoons flour
  • Salt
  • Pepper
  • Olive oil
  • Feta cheese (as much as you like)
  • Melting cheeses (as much as you like)
  • 1 red bell pepper
  • 1 tomato (without the juices)
  • Cold cuts of your choice (optional)
  • Any additional ingredients you prefer

Instructions

Lightly fry the potato slices and arrange them in a baking tray.

In a bowl, beat the eggs, then add the milk, flour, a drizzle of olive oil, feta, melting cheeses, tomato, bell pepper, cold cuts, salt, and pepper. Mix everything well.

Pour the mixture over the potatoes and bake in a preheated oven at 170–180°C (340–355°F) for 30–35 minutes.

Let the omelette rest for 10 minutes before serving warm. If you have leftovers, don’t worry—it’s just as delicious served cold.
