- 300 g sausage

Instructions:
- Cook the Noodles:
Bring a pot of water to a boil, add the noodles, and turn off the heat. Cover the pot with a lid and let the noodles soften according to the package instructions, approximately 3-4 minutes.
Drain the noodles, reserving 100 g of the cooking water, and set aside. - Sauté the Sausage:
Heat 2 tablespoons of olive oil in a pan over high heat. Sauté the sausage slices until golden brown, then transfer them to a bowl and set aside. - Cook the Vegetables:
In the same pan, add 2 more tablespoons of olive oil. Start by sautéing the broccoli and carrot until they begin to soften. Add the onion, garlic, and red pepper, and continue to sauté until all the vegetables are tender but still slightly crisp. - Combine Everything:
Return the sausage to the pan with the vegetables. Add the noodles, salt, pepper, sweet paprika, and a bit of the reserved noodle cooking water. Toss everything together until well combined and heated through. - Let the Flavors Meld:
Remove from heat and let the dish rest for about 10 minutes to allow the flavors to meld. - Serve:
