
Spinach Dough for Pappardelle
Ingredients:
- 400 g flour
- 160 g fresh spinach leaves
- 3 eggs
- 1 pinch of salt
- 1 tablespoon water
Preparation for the Dough:
- Cook the Spinach:
Wash the spinach thoroughly and place it in a saucepan with the water. Boil for about 10 minutes until it releases its moisture.

- 50 g white wine
- 1 cinnamon stick
- 2 bay leaves

- Pepper
- Sweet paprika
- Olive oil
Preparation for the Minced Meat Sauce:
- Sauté the Aromatics:
Heat olive oil in a pot, add the onion and garlic, and sauté for 2-3 minutes. - Cook the Mince:
Add the minced meat and stir until it changes color. Stir in the tomato paste and sauté for another 2 minutes. Deglaze with white wine. - Simmer the Sauce:
Add the cinnamon stick, bay leaves, salt, pepper, paprika, and enough water to just cover the ingredients.
Simmer on medium heat for 40-45 minutes until the mince is tender and the sauce has thickened. Add more water if needed during cooking.
Boiling the Pappardelle:
- Cook the Pasta:
Bring a large pot of salted water to a boil.
Add the pappardelle and cook for 4-5 minutes, or until they rise to the surface. - Serve:
Drain the pasta, drizzle with a little olive oil to prevent sticking, and serve topped with the minced meat sauce and grated cheese.
