Spinach Dough for Pappardelle

Ingredients:

  • 400 g flour
  • 160 g fresh spinach leaves
  • 3 eggs
  • 1 pinch of salt
  • 1 tablespoon water

Preparation for the Dough:

  1. Cook the Spinach:
    Wash the spinach thoroughly and place it in a saucepan with the water. Boil for about 10 minutes until it releases its moisture.
    Once cooked, transfer the spinach to paper towels to dry, then puree it in a blender.
  2. Make the Dough:
    In a mixing bowl, add the flour and create a well in the center.
    Add the eggs, salt, and pureed spinach.
    Knead for about 10 minutes until you have a soft, smooth dough. If needed, add a bit more flour.
  3. Rest the Dough:
    Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  4. Roll and Shape the Dough:
    After resting, roll out the dough into thin sheets using a rolling pin or pasta machine. Cut into pappardelle strips or the shape of your choice.

Pappardelle Ingredients:

  • 500 g pappardelle
  • 2 tablespoons olive oil
  • Salt
  • Grated cheese for serving

Minced Meat Sauce Ingredients:

  • 300 g pork mince
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 tablespoons tomato paste
  • 50 g white wine
  • 1 cinnamon stick
  • 2 bay leaves
  • Salt
  • Pepper
  • Sweet paprika
  • Olive oil

Preparation for the Minced Meat Sauce:

  1. Sauté the Aromatics:
    Heat olive oil in a pot, add the onion and garlic, and sauté for 2-3 minutes.
  2. Cook the Mince:
    Add the minced meat and stir until it changes color. Stir in the tomato paste and sauté for another 2 minutes. Deglaze with white wine.
  3. Simmer the Sauce:
    Add the cinnamon stick, bay leaves, salt, pepper, paprika, and enough water to just cover the ingredients.
    Simmer on medium heat for 40-45 minutes until the mince is tender and the sauce has thickened. Add more water if needed during cooking.

Boiling the Pappardelle:

  1. Cook the Pasta:
    Bring a large pot of salted water to a boil.
    Add the pappardelle and cook for 4-5 minutes, or until they rise to the surface.
  2. Serve:
    Drain the pasta, drizzle with a little olive oil to prevent sticking, and serve topped with the minced meat sauce and grated cheese.
