Ingredients:
- 500g ground beef
- 4 slices of bread, soaked and squeezed
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 bunch parsley, finely chopped
- 2 eggs
- A pinch of cinnamon
- A bit of cumin
- 1 tomato, grated (without its juice)
- Salt
- Pepper
- Olive oil
Instructions:
- In a bowl, combine all ingredients along with a bit of olive oil, and mix everything well. Let the mixture rest in the refrigerator for at least an hour to allow the flavors to meld.
- Knead the mixture once more, shape it into meatballs, and arrange them on a plate.
- Heat olive oil in a pan over medium heat and fry the meatballs on both sides until they develop a nice golden color.
For the Peppers:
- Wash and dry the peppers thoroughly, then fry them in hot oil for about two minutes on each side.
- Season with salt, and if desired, drizzle with a few drops (or more) of vinegar.
For the Eggplants:
- Slice the eggplants and place them in salted water for about 30 minutes. Pat them dry well with paper towels.
- Fry the eggplants in hot oil on both sides until they turn golden, then season with salt while still hot.
