Ingredients:

  • 500g ground beef
  • 4 slices of bread, soaked and squeezed
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 bunch parsley, finely chopped
  • 2 eggs
  • A pinch of cinnamon
  • A bit of cumin
  • 1 tomato, grated (without its juice)
  • Salt
  • Pepper
  • Olive oil

Instructions:

  1. In a bowl, combine all ingredients along with a bit of olive oil, and mix everything well. Let the mixture rest in the refrigerator for at least an hour to allow the flavors to meld.
  2. Knead the mixture once more, shape it into meatballs, and arrange them on a plate.
  3. Heat olive oil in a pan over medium heat and fry the meatballs on both sides until they develop a nice golden color.

For the Peppers:

  1. Wash and dry the peppers thoroughly, then fry them in hot oil for about two minutes on each side.
  2. Season with salt, and if desired, drizzle with a few drops (or more) of vinegar.

For the Eggplants:

  1. Slice the eggplants and place them in salted water for about 30 minutes. Pat them dry well with paper towels.
  2. Fry the eggplants in hot oil on both sides until they turn golden, then season with salt while still hot.
