Ingredients

  • 500g lentils
  • 1 onion, finely chopped
  • 3–4 garlic cloves
  • 1 tomato, finely chopped
  • Salt
  • Oregano
  • Olive oil

Instructions

  1. Prepare the Lentils
    • Rinse the lentils thoroughly and place them in a pot.
    • Add enough water to just cover the lentils, plus a little extra.
  2. Cook the Base
    • Add the chopped onion, garlic, salt, a drizzle of olive oil, and the chopped tomato to the pot.
    • Cook over medium heat for 45–50 minutes, or until the lentils reach your desired tenderness.
  3. Adjust Water if Needed
    • If more water is needed during cooking, always add hot water to avoid interrupting the simmering process.
  4. Add Final Touches
    • Once the lentils are fully cooked, turn off the heat.
    • Stir in the oregano and the remaining olive oil. Adding these ingredients at the end preserves their fresh aroma and flavor.
  5. Serve
    • Enjoy warm, with a slice of crusty bread or a drizzle of additional olive oil for extra richness.
