Ingredients for the Gnocchi
- 500 g potatoes
- 180 g flour
- 120 g melting cheese
- 2 eggs
- 1 pinch of salt
- 1 pinch of pepper
- Salt for boiling
Preparation of the Gnocchi
- Peel the potatoes, cut them into large chunks, and place them in a pot. Cover with plenty of cold water, add salt, and boil on high heat until soft, about 20-25 minutes.
- Drain the potatoes and spread them on a baking tray to cool and allow excess moisture to evaporate.

- Add the remaining ingredients and knead gently until all the ingredients combine into a dough. Avoid overworking the dough to prevent it from becoming stiff.

- Cut the strips into small gnocchi pieces, lightly flour them, and set them aside to prevent sticking.
Boiling the Gnocchi
- Bring a pot of water to a boil and add salt.
- Add the gnocchi to the boiling water and cook evenly until they float to the surface.
- Once they float, cook for another 40-50 seconds. Remove them with a slotted spoon and transfer them to a bowl of ice water for 5 minutes.
- Drain the gnocchi and spread them on a baking tray.

- Add the gnocchi and sauté for 2-3 minutes until they get a light golden color.
- Pour in the cream and add the dill. Cook everything together for about 5 minutes until the sauce thickens.
- Serve hot, garnished with some finely chopped dill.
