Ingredients
- 6 sheets of phyllo pastry for sweets
- 6 slices of cured beef (pastourma)
- 100 g melting cheese (such as mozzarella)
- 100 g feta cheese, crumbled
- 3 eggs
- Olive oil
Instructions
- In a skillet, add 1 teaspoon of olive oil and heat over medium-low heat.
- With the skillet still on low heat, take one sheet of phyllo, crumple it slightly, and place it in the skillet. Drizzle with 1 teaspoon of olive oil.
- Repeat the process with the next 2 sheets, adding a small drizzle of olive oil to each.
- Once all three sheets are layered in the skillet, add the melting cheese, slices of cured beef, and crumbled feta. Crack the eggs on top and gently break the yolks.
- Layer the remaining 3 phyllo sheets on top in the same crumpled and oiled way. Use a fork to seal the edges around the skillet.
- Increase the heat slightly. Carefully lift the pie with a fork, and when the bottom turns golden, flip it over using a plate, as you would with an omelet.
- When the other side is golden brown, turn off the heat, cover the skillet with a lid, and let it sit for 5 minutes to finish cooking.
