Ingredients

For the fritters:

  • 300 g chickpeas, soaked overnight
  • 1 onion, finely chopped
  • ½ bunch parsley, finely chopped
  • 10 mint leaves, finely chopped
  • 1 egg
  • Salt
  • Pepper
  • 1 pinch cumin or a touch of curry powder
  • 100 g breadcrumbs
  • Olive oil for frying

For the sauce:

  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 200 g tomato puree or 2 tbsp tomato paste diluted in water
  • 400 g water or vegetable broth
  • Salt
  • Pepper
  • Sweet paprika
  • 60 g olive oil

Instructions

For the sauce:

  1. Heat the olive oil in a saucepan. Add the onion and garlic and sauté until translucent.
  2. Stir in the tomato puree or diluted paste, vegetable broth, salt, pepper, and paprika.
  3. Simmer for 15-20 minutes until the sauce thickens.

For the fritters:

  1. Soak the chickpeas in water overnight.
  2. The next day, boil the chickpeas until tender, then drain and let them cool.
  3. Blend the chickpeas in a food processor along with the onion, parsley, mint, egg, salt, pepper, cumin, and breadcrumbs until the mixture is smooth and consistent.
  4. Shape the mixture into small patties and place them on a plate.
  5. Heat olive oil in a frying pan over medium heat and fry the patties until golden brown on both sides.
  6. Place the fried fritters into the prepared tomato sauce. Simmer together for 10-15 minutes.

Serving Suggestions:
Serve the fritters either on their own, topped with the rich tomato sauce, or pair them with steamed rice for a hearty meal.
