Ingredients

- 300 g chickpeas, soaked overnight

- 2 garlic cloves, finely chopped
- 200 g tomato puree or 2 tbsp tomato paste diluted in water
- 400 g water or vegetable broth
- Salt
- Pepper
- Sweet paprika
- 60 g olive oil
Instructions
For the sauce:
- Heat the olive oil in a saucepan. Add the onion and garlic and sauté until translucent.
- Stir in the tomato puree or diluted paste, vegetable broth, salt, pepper, and paprika.
- Simmer for 15-20 minutes until the sauce thickens.
For the fritters:
- Soak the chickpeas in water overnight.
- The next day, boil the chickpeas until tender, then drain and let them cool.
- Blend the chickpeas in a food processor along with the onion, parsley, mint, egg, salt, pepper, cumin, and breadcrumbs until the mixture is smooth and consistent.
- Shape the mixture into small patties and place them on a plate.
- Heat olive oil in a frying pan over medium heat and fry the patties until golden brown on both sides.
- Place the fried fritters into the prepared tomato sauce. Simmer together for 10-15 minutes.
