Ingredients

  • 1-2 kg flour
  • Salt
  • 500 g feta cheese
  • Water

Instructions

  1. In a large bowl, add the flour and create a well in the center. Add the salt and the sourdough starter.
  2. Gradually add water while kneading until the dough no longer sticks to your hands and forms a smooth, well-kneaded ball.
  3. Divide the dough into small balls. Flatten each ball slightly on a clean surface and place a portion of the feta cheese in the center.
  4. Press the cheese gently with your fingers, then fold the dough over the cheese to form a ball again, kneading lightly to seal it.
  5. Arrange the dough balls in a baking tray in a circular “flower-like” arrangement, leaving some space for them to rise. Cover with a warm blanket and let rise until doubled in size.
  6. Preheat the oven. Bake at high heat for 10 minutes, then lower the temperature to 160-170°C and bake for about an hour, adjusting the temperature as needed based on your oven’s strength.
