Ingredients
- 1 kg frozen cod
- 2 onions, sliced
- 3 garlic cloves, finely chopped
- 4 ripe tomatoes, finely chopped
- 1 bunch parsley, finely chopped
- Flour for frying
- Salt
- Pepper
- Sweet paprika
- Olive oil
Preparation
For the Cod
- Thaw the cod, cut it into pieces, and place them in a strainer to drain.
- Once drained, coat the fish pieces in flour and arrange them on a platter.
- Heat olive oil in a frying pan and fry the fish on each side for about 1 minute, just until a light crust forms. Transfer to a bowl.
For the Sauce
- In a shallow pot, heat olive oil and sauté the onions and garlic for 2-3 minutes.
- Add the chopped tomatoes and sauté for another 2 minutes.
- Add the parsley, salt, pepper, and paprika to the sauce.
- Finally, place the lightly fried cod in the sauce and simmer everything together for 15-20 minutes until the flavors meld and the sauce thickens. The tomatoes will release liquid, but add a little water if needed.
This rich, aromatic dish brings out the heartiness of cod with a deliciously tangy tomato sauce—a simple yet flavorful meal, perfect for any day of the week. Enjoy!
