Ingredients

  • 2 kg mutton (thick cuts)
  • 2 medium potatoes
  • 2 carrots
  • 1 zucchini
  • 1 onion
  • 2 garlic cloves
  • Salt
  • Pepper
  • Olive oil
  • Lemon juice

Instructions

  1. Wash the meat thoroughly and place it in a large pot.
  2. Clean and wash the vegetables well.
  3. Cut the potatoes into quarters, and chop the carrots and zucchini into similar-sized pieces as the potatoes.
  4. Slice the onion and leave the garlic cloves whole.
  5. Add all the vegetables to the pot with the meat and cover with water.
  6. Add salt and olive oil, then cover the pot.
  7. Boil over medium heat for 1.5 to 2 hours, until the meat is tender.
    • You can adjust the amount of broth according to your preference for a thicker or thinner soup.
  8. When ready, serve hot with freshly ground pepper and lemon juice.
