Ingredients for the Chicken
- Chicken breast from 1 chicken, cut into thin slices
- 1 cup flour
- 2 eggs, beaten
- 6 slices of bread, blended into breadcrumbs
- Salt
- Pepper
- Olive oil
Ingredients for the Rice
- 300 g brown rice (2 cups)
- 1000 g water (4 cups)
- 1 small onion, finely chopped
- 2 tablespoons olive oil
- 1 tablespoon butter
- Salt
Instructions for the Chicken
- Wash the chicken well and place it in a colander to drain.
- In the meantime, blend the bread into breadcrumbs and place them in a bowl.
- In a separate bowl, beat the eggs.
- In a third bowl, add the flour. Season all the ingredients in the three bowls with a little salt.
- Season the chicken with salt and pepper, then coat each slice first in flour, then in the beaten eggs, and finally in the breadcrumbs. Place them on a plate.
- Heat olive oil in a large pan and fry the schnitzels on both sides until they achieve a nice golden color.
- Alternatively, you can bake the schnitzels instead of frying them. Preheat the oven to 190-200°C (375-390°F) and bake for about 25-30 minutes, turning them halfway through, until they are golden on both sides.
Instructions for the Rice
- In a saucepan, heat the olive oil and butter, and sauté the onion for 2 minutes.
- Add the rice, stir it briefly with the oil, then add salt and water.
- Let the rice simmer for about 20 minutes over medium heat until it absorbs the water.
- If you prefer the rice to be softer, add a little more water and cook longer.
