Ingredients for the Chicken

  • Chicken breast from 1 chicken, cut into thin slices
  • 1 cup flour
  • 2 eggs, beaten
  • 6 slices of bread, blended into breadcrumbs
  • Salt
  • Pepper
  • Olive oil

Ingredients for the Rice

  • 300 g brown rice (2 cups)
  • 1000 g water (4 cups)
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Salt

Instructions for the Chicken

  1. Wash the chicken well and place it in a colander to drain.
  2. In the meantime, blend the bread into breadcrumbs and place them in a bowl.
  3. In a separate bowl, beat the eggs.
  4. In a third bowl, add the flour. Season all the ingredients in the three bowls with a little salt.
  5. Season the chicken with salt and pepper, then coat each slice first in flour, then in the beaten eggs, and finally in the breadcrumbs. Place them on a plate.
  6. Heat olive oil in a large pan and fry the schnitzels on both sides until they achieve a nice golden color.
    • Alternatively, you can bake the schnitzels instead of frying them. Preheat the oven to 190-200°C (375-390°F) and bake for about 25-30 minutes, turning them halfway through, until they are golden on both sides.

Instructions for the Rice

  1. In a saucepan, heat the olive oil and butter, and sauté the onion for 2 minutes.
  2. Add the rice, stir it briefly with the oil, then add salt and water.
  3. Let the rice simmer for about 20 minutes over medium heat until it absorbs the water.
    • If you prefer the rice to be softer, add a little more water and cook longer.
