Ingredients

  • 1 kg beef
  • 500 g pasta
  • Salt
  • Pepper
  • Olive oil
  • Grated mizithra cheese

Instructions

  1. Rinse the beef well, place it in a pot, add salt and enough water to cover it.
  2. Once it starts boiling, skim off any foam that forms on the surface.
  3. Add olive oil and continue cooking on medium heat for about 1.5 hours until the meat is tender.
  4. When the meat is done, transfer it to a bowl with some broth to keep it warm and prevent it from darkening. Strain the remaining broth through a fine sieve back into the pot.
  5. Bring the strained broth to a boil and add the pasta. Cook the pasta for about 20 minutes or until tender, then drain.
  6. Heat a small amount of olive oil in a pan until hot, then pour it over the drained pasta. Place the pasta on a serving platter and top with grated mizithra cheese.
  7. Serve the beef on the side with a drizzle of raw olive oil and a sprinkle of freshly ground pepper.
