Ingredients
- 1 kg beef
- 500 g pasta
- Salt
- Pepper
- Olive oil
- Grated mizithra cheese
Instructions
- Rinse the beef well, place it in a pot, add salt and enough water to cover it.
- Once it starts boiling, skim off any foam that forms on the surface.
- Add olive oil and continue cooking on medium heat for about 1.5 hours until the meat is tender.
- When the meat is done, transfer it to a bowl with some broth to keep it warm and prevent it from darkening. Strain the remaining broth through a fine sieve back into the pot.
- Bring the strained broth to a boil and add the pasta. Cook the pasta for about 20 minutes or until tender, then drain.
- Heat a small amount of olive oil in a pan until hot, then pour it over the drained pasta. Place the pasta on a serving platter and top with grated mizithra cheese.
- Serve the beef on the side with a drizzle of raw olive oil and a sprinkle of freshly ground pepper.
