Ingredients
- 1 kg artichokes
- 2 onions, sliced
- 2-3 carrots, quartered
- 1 bunch dill
- 1-2 tbsp flour
- Juice of 1-2 lemons
- Salt
- Pepper
- Olive oil
Instructions
For the Lemon Mixture
- Squeeze the lemons into a bowl and mix the juice with the flour until a smooth, creamy consistency is achieved. Set aside.
For the Artichokes
- Prepare a Lemon Water Bath
- In a large bowl, fill with water and squeeze the juice of one lemon into it. Save the lemon halves for rubbing on the artichokes.
- Clean the Artichokes
- Trim the artichokes, removing the tough outer leaves and retaining the tender hearts. As you clean each artichoke, rub it with the reserved lemon halves to prevent browning.
- Prepare the Vegetables
- Peel and slice the onions, and cut the carrots into sticks or wedges.
- Cook the Dish
- Heat olive oil in a large pot over medium heat. Lightly sauté the onions, artichokes, and carrots for a few minutes.
- Add enough water to just cover the ingredients, sprinkle in the salt, and simmer over medium heat until the artichokes and carrots are tender.
- Finish with Lemon and Dill
- Five minutes before the dish is done, stir in the lemon-flour mixture, dill, and pepper. Allow everything to cook together for another 5 minutes until the sauce thickens slightly.
