Ingredients for Arabic Pita Dough

  • 500 g all-purpose flour
  • 2 tsp salt
  • 1 tbsp sesame seeds
  • 1/2 tsp black pepper
  • 300 g water
  • 4 tbsp olive oil

Preparation for the Dough

  1. In a bowl, combine the flour, salt, pepper, sesame seeds, and olive oil.
  2. Gradually add the water, kneading until you form a soft, non-sticky dough. Add more flour if necessary.
  3. Cover the bowl and let the dough rest for 30 minutes.
  4. Line a baking tray with parchment paper.
  5. Divide the dough into 7 portions, roll each into thin rounds, and place them on the tray.
  6. Sprinkle sesame seeds on top and gently press to adhere.
  7. Preheat the oven to 190–200°C (375–390°F) and bake for about 15 minutes, or until they reach your preferred level of doneness.

Ingredients for the Mushrooms

  • 500 g mushrooms, sliced
  • 2 tbsp olive oil for sautéing
  • 2 garlic cloves, finely chopped
  • Salt
  • Pepper
  • A pinch of thyme

For the Sauce

  • 2 tbsp mustard
  • 1 tbsp balsamic vinegar
  • 1 tsp honey

Optional Accompaniments

  • Sliced tomatoes
  • Feta cheese or other toppings of your choice

Preparation for the Mushrooms

  1. Slice the mushrooms.
  2. Heat the olive oil in a pan and add the mushrooms, thyme, and garlic.
  3. Sauté for 4–5 minutes until the mushrooms have released and absorbed most of their liquid.
  4. Season with salt and pepper, stir, and remove from heat.

Preparation for the Sauce

  1. In a bowl, mix the mustard, honey, and balsamic vinegar until well combined.
  2. Add the sautéed mushrooms to the sauce and stir to coat evenly.

To Assemble

  1. Place the Arabic pita on a plate.
  2. Top with the mushroom mixture, sliced tomatoes, and crumbled feta cheese (or your preferred toppings).
