Ingredients for Arabic Pita Dough

  • 500 g all-purpose flour
  • 2 tsp salt
  • 1 tbsp sesame seeds
  • 1/2 tsp black pepper
  • 300 g water
  • 4 tbsp olive oil

Preparation for the Dough

  1. In a bowl, combine the flour, salt, pepper, and olive oil.
  2. Gradually add the water, kneading until you form a soft, non-sticky dough. Add more flour if needed.
  3. Cover the bowl and let the dough rest for 30 minutes.
  4. Line a baking tray with parchment paper.
  5. Divide the dough into 7 pieces, roll each into thin rounds, and place them on the tray.
  6. Sprinkle sesame seeds on top and press gently to stick.
  7. Bake in a preheated oven at 190–200°C (375–390°F) for approximately 15 minutes, or until cooked to your preference.

  • 500 g mushrooms, sliced
  • 2 garlic cloves, finely chopped
  • 2 tbsp olive oil for sautéing
  • Salt
  • Pepper
  • Thyme

For the Sauce

  • 1 tbsp balsamic vinegar
  • 2 tbsp mustard
  • 1 tsp honey

For Serving

  • Sliced tomato
  • Feta cheese

Preparation for the Mushrooms

  1. Slice the mushrooms.
  2. Heat the olive oil in a pan and add the mushrooms, garlic, and thyme.
  3. Sauté for 4–5 minutes until the mushrooms absorb their liquid.
  4. Season with salt and pepper, stir, and remove from heat.

Preparation for the Sauce

  1. In a bowl, mix the mustard, honey, and balsamic vinegar until smooth.
  2. Add the sautéed mushrooms to the sauce and mix gently.

To Assemble

  1. Place the Arabic pitas on plates.
  2. Top each pita with the mushroom mixture, sliced tomato, and crumbled feta cheese.
  3. Fold the pita and serve warm.
