Ingredients

  • 250 g Carolina rice
  • 650 g water (add more if needed)
  • 150 g butter
  • 2 tablespoons sugar (adjust to taste)
  • 1 tablespoon sugar (for the vermicelli)
  • 4 nests of vermicelli
  • 2 tablespoons raisins
  • Salt
  • Orange zest

Instructions

  1. In a pot, add the water and salt, and bring to a boil.
  2. Once the water is boiling, add the rice and cook over medium heat for 10 minutes.
  3. Stir in the sugar and continue cooking until the rice becomes creamy and thickened.
  4. Meanwhile, in a pan, melt the butter over medium heat. Once it’s hot, add the vermicelli and 1 tablespoon of sugar.
  5. Stir continuously until the vermicelli turns a golden brown.
  6. Just before removing the rice from the heat, add the toasted vermicelli, raisins, and orange zest. Stir well to combine.
  7. Cover the pot with a clean kitchen towel and place the lid on top. Let it rest undisturbed for about 1 hour to allow the flavors to meld together.
