Pork Ribs & Sweet Potatoes
A warm embrace of meat and comfort—tender pork ribs paired with caramelized sweet potatoes, all slow-baked in a single casserole for a soulful union of rich flavors and homey charm.
Ingredients
- 2 kg pork ribs
- 3 sweet potatoes
- 100 g water
- Salt
- Pepper
- Smoked paprika
- Oregano
- 2 garlic cloves, finely chopped
- 3 tablespoons balsamic vinegar
- Olive oil
Instructions
- In a bowl, mix together salt, pepper, smoked paprika, oregano, garlic, and balsamic vinegar.
- Place the ribs in a casserole dish, sprinkle with the seasoning mixture, and rub it in well.
- Add the water and a drizzle of olive oil. Cover the casserole dish and bake in a preheated oven at 180-190°C (350-375°F) for about 1 hour and 15 minutes, or until the meat is tender.
- Wash the sweet potatoes thoroughly, cut them into pieces, and season lightly with salt and pepper.
- When the ribs need about 25-30 more minutes to cook, add the sweet potatoes to the casserole.
- Monitor the liquid as it cooks; if needed, add a bit more water gradually to keep the meat from drying out.
Why It’s Irresistible
The ribs, slow-cooked to fork-tender perfection, release savory juices that gently meld with the sweet, creamy potatoes—resulting in a hearty, one-dish melody of texture and warmth.
Serving Suggestions
Best served warm, perhaps with fresh herbs or a splash of its own braising juices. Ideal as a satisfying centerpiece or comforting main that nourishes both body and spirit.
