Ingredients
- 1 kg frozen cod
- 1 kg wild greens, cleaned
- 2 onions, sliced into rings
- Salt
- Flour
- Olive oil
Preparation for the Greens
- Thoroughly clean the greens, then soak them in a bowl of water with a splash of vinegar for 5 minutes to remove any small insects.
- Rinse the greens in fresh water 4-5 times to ensure they are completely free of soil.
- Boil the greens in salted water until they reach your desired level of tenderness. Once ready, use a fork to transfer the desired amount to a plate and drizzle with olive oil.
Preparation for the Cod
- Clean the cod by removing any scales and cut it into slices. Squeeze the cod gently to remove excess ice water and salt it lightly.
- Heat a skillet over medium heat and add olive oil until it’s hot.
- Meanwhile, coat the fish in flour and place it on a platter.
- When the oil is hot, fry the cod on both sides until it turns a golden color.
For the Onions
- In a separate pan, heat a little olive oil and add the onion rings.
- Sauté until they reach a golden color (without burning) and place them over the fried cod.
Note: This recipe also works well with salt-cured cod. If using salted cod, desalt it by soaking in water for approximately 36 hours, changing the water multiple times a day.
