Ingredients

  • 1 kg frozen cod
  • 1 kg wild greens, cleaned
  • 2 onions, sliced into rings
  • Salt
  • Flour
  • Olive oil

Preparation for the Greens

  1. Thoroughly clean the greens, then soak them in a bowl of water with a splash of vinegar for 5 minutes to remove any small insects.
  2. Rinse the greens in fresh water 4-5 times to ensure they are completely free of soil.
  3. Boil the greens in salted water until they reach your desired level of tenderness. Once ready, use a fork to transfer the desired amount to a plate and drizzle with olive oil.

Preparation for the Cod

  1. Clean the cod by removing any scales and cut it into slices. Squeeze the cod gently to remove excess ice water and salt it lightly.
  2. Heat a skillet over medium heat and add olive oil until it’s hot.
  3. Meanwhile, coat the fish in flour and place it on a platter.
  4. When the oil is hot, fry the cod on both sides until it turns a golden color.

For the Onions

  1. In a separate pan, heat a little olive oil and add the onion rings.
  2. Sauté until they reach a golden color (without burning) and place them over the fried cod.

Note: This recipe also works well with salt-cured cod. If using salted cod, desalt it by soaking in water for approximately 36 hours, changing the water multiple times a day.
