<p>Black giant beans simmered in tomato-onion sauce with garlic, carrot, celery &amp; herbs—earthy richness and deep flavor coming together for satisfying warmth.</p>



<p><strong>Ingredients</strong></p>

<li>400g black giant beans</li>



<li>3 ripe tomatoes, finely chopped</li>



<li>1 onion, finely chopped</li>



<li>2 garlic cloves, finely chopped</li>



<li>1 tablespoon tomato paste, diluted with a little water</li>



<li>1 carrot, sliced</li>



<li>2 celery stalks, chopped (without leaves)</li>



<li>A sprig of rosemary</li>



<li>Salt</li>



<li>Pepper</li>



<li>Sweet paprika</li>



<li>Olive oil</li>

<p><strong>Instructions</strong></p>

<li>Thoroughly rinse the giant beans and soak them in plenty of water for at least 10-12 hours.</li>



<li>Once ready, boil them over medium heat for about an hour until they soften and have the desired amount of broth, or cook them in a pressure cooker.</li>



<li>In a separate pot, heat the olive oil and sauté the onion and garlic until fragrant.</li>



<li>Add the tomatoes, tomato paste, carrot, celery, rosemary, salt, pepper, and paprika. Simmer everything together for 3-4 minutes.</li>



<li>Once the beans are cooked, add them to the sauce in the pot. Simmer for 20-25 minutes until the flavors meld together and the sauce thickens.</li>

<li><strong>Cook the Lentils:</strong><br>Boil the lentils until just tender, but still firm to the bite (al dente). Drain and set aside.</li>



<li><strong>Prepare the Filling:</strong><br>Heat the olive oil in a pot over medium heat. Add the onions, green onions, and garlic. Sauté until they soften.<br>Add the rice, salt, pepper, and sweet paprika. Stir until the rice becomes glossy.<br>Mix in the mint, lentils, and water, and cook for 2-3 minutes to combine the flavors.
