- 1 large carrot, diced
- 1/4 of a cabbage, finely chopped
- 300g spinach, chopped
- 1 onion, finely chopped
- 2 spring onions, finely chopped
- 1 small leek, finely chopped
- 400g water
- Salt
- Pepper
- Olive oil
Instructions
- In a pot, heat the olive oil over medium heat. Sauté the onion, spring onions, and leek for 2-3 minutes until softened.
- Add the water, carrot, cabbage, salt, and pepper. Let the mixture boil for about 10 minutes.
- Lower the heat and continue simmering for approximately 20 minutes until the vegetables are tender.
- Add the spinach and cook for an additional 5-10 minutes.
- If you prefer a soup with more liquid, add a little extra water and adjust the seasoning to taste.
