Ingredients:

  • 2 zucchinis, thinly sliced
  • 1 green bell pepper, finely chopped (or a mix of colors if preferred)
  • 1 large carrot, cut into pieces
  • 2 large onions, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • Any other vegetables you prefer
  • Salt
  • Pepper
  • Fresh or dried oregano
  • Olive oil

Instructions:

  1. Prepare the Vegetables:
    Wash and clean all the vegetables thoroughly. Cut them into the desired sizes and shapes.
  2. Heat the Oil:
    In a large skillet, heat the olive oil until hot.
  3. Sauté the Vegetables:
    Add the vegetables to the skillet. Season with salt, pepper, and oregano. Sauté them for about 5 minutes, stirring occasionally to prevent sticking.
  4. Steam to Soften:
    Turn off the heat, cover the skillet with a lid, and let the vegetables soften using their own steam.
