Ingredients

  • 400 g sausages, cut into bite-sized pieces
  • 1 Florina (red) pepper, finely chopped
  • 2 ripe tomatoes, finely chopped
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 bay leaf
  • 50 g white wine
  • 50 g water
  • Salt
  • Pepper
  • Sweet paprika
  • Olive oil

Instructions for the Sausage Sauce

  1. Heat the olive oil in a pot and sauté the sausage pieces on all sides until browned.
  2. Add the onion, garlic, and red pepper. Sauté for 1 minute, then deglaze the pan with the white wine.
  3. Add the tomatoes, bay leaf, salt, pepper, paprika, and water. Simmer for 15-20 minutes until the sauce thickens.
    • Add more water if needed to achieve the desired consistency.

For the Penne
Ingredients

  • 500 g penne pasta
  • Salt
  • Olive oil

Instructions

  1. In a large pot, bring water to a boil, add salt, and once boiling, add the penne.
  2. Cook for about 20 minutes or until the pasta is cooked to your preference.
  3. Drain the penne well and return them to the pot.
  4. In a pan, heat olive oil until very hot and then pour it over the penne to infuse them with the oil’s aroma.
