Golden Potato & Feta Harmony

Ingredients
- 1 kg potatoes
- 1 dry onion
- 2 spring onions, finely chopped
- 2 garlic cloves, finely chopped
- 1 Florina pepper, finely chopped
- 3 eggs
- 3 tbsp breadcrumbs
- 150 g feta cheese, crumbled
- Salt
- Pepper
- Cumin
- Mint
- Flour
- 2 tbsp olive oil (for the mixture)
- Olive oil (for frying)
Instructions
- Prepare the Potatoes:
Wash the potatoes thoroughly and boil them whole with their skins until tender. Once cooked, allow them to cool, peel them, and grate them into a bowl. - Combine Ingredients:
Add the grated potatoes, onion, spring onions, garlic, pepper, egg yolks, breadcrumbs, feta, salt, pepper, cumin, mint, and olive oil into the bowl. Mix well until all ingredients are fully combined. Let the mixture rest for 15 minutes to allow the flavors to meld. - Shape the Fritters:
With oiled hands, shape the potato mixture into patties. Coat each patty first in flour and then in the beaten egg whites. - Cook the Fritters:
- Frying Method: Heat olive oil in a frying pan and fry the patties until golden brown on both sides.
- Baking Method: Place the patties on a baking tray lined with parchment paper and bake in a preheated oven at 180–190°C until golden and crisp.
