- 250 g dried plums
- 125 g dried dates
- 1.5 liters vinegar
- 1,250 g sugar
- 250 g onions
- 6 g salt
- 4 g cayenne pepper
Instructions
- Soak the Fruits:
Place the dried fruits in a large bowl and add vinegar until they are fully submerged. Let them soak for 6 hours to soften and plump up. - Drain and Blend:
After 6 hours, drain the fruits over a pot using a strainer, reserving the vinegar. Blend the fruits in a blender until they are finely chopped but not pureed. - Combine Ingredients:
Add the chopped fruits to the pot with the reserved vinegar. Similarly, blend the onions until finely chopped and add them to the pot. - Cook the Chutney:
Add the sugar, salt, and cayenne pepper to the pot. Cook the mixture over medium heat for 1.5 to 2 hours, stirring frequently to prevent sticking, until the chutney thickens. - Jar the Chutney:
Once the chutney is ready, transfer it to sterilized jars while still hot. Seal the jars tightly and store in a cool, dry place.
