Dough for Arabic Pita

Ingredients

  • 500 g all-purpose flour
  • 2 tsp salt
  • 1 tbsp sesame seeds
  • 1/2 tsp black pepper
  • 300 g water
  • 4 tbsp olive oil

Instructions

  1. In a bowl, combine the flour, salt, pepper, sesame seeds, and olive oil.
  2. Gradually add the water while kneading until you achieve a soft, non-sticky dough. Add more flour if necessary.
  3. Cover the bowl and let the dough rest for 30 minutes.
  4. Line a baking tray with parchment paper.
  5. Divide the dough into 7 pieces, roll each one into thin rounds using a rolling pin, and place them on the tray.
  6. Sprinkle sesame seeds on top and press gently to stick.
  7. Preheat the oven to 190–200°C (375–390°F) and bake for about 15 minutes, depending on your oven and desired crispness.

  • 1 large Arabic pita
  • 3 slices of bacon, chopped
  • 100 g mushrooms
  • 2 eggs
  • Lettuce leaves
  • Salt
  • Pepper
  • 1 tbsp mayonnaise
  • 1 tbsp olive oil

Instructions

  1. Heat the olive oil in a frying pan and sauté the mushrooms for 3–4 minutes until they release their moisture.
  2. Add the bacon and sauté together for another 2–3 minutes.
  3. In a bowl, beat the eggs with salt and pepper. Pour the mixture into the pan with the mushrooms and bacon.
  4. Cook the omelette until set on one side, then flip to cook the other side.
  5. Place the Arabic pita on a plate and spread the mayonnaise evenly.
  6. Top the pita with the omelette and lettuce leaves.
